Linguine with pistachio pesto and shrimp.

Shrimp and pistachio pesto: all the flavour of the Mediterranean enclosed in a single recipe.

A first course ideal for surprising your guests.

 

Ingredients for 4 people:

320 g linguine or spaghetti

200 g shrimp

100 g pistachio paste

100 g parmesan cheese

50 g butter

50 g pistachio  grain?

50 g extra virgin olive oil

 

How to prepare:

 

1) Shell the shrimp and cut them into pieces

2) In a large pan, lightly fry the extra virgin olive oil and throw there chopped shrimp.

3) After cooking the shrimp for a couple of minutes, turn off the heat and add the pistachio paste, cheese, chopped pistachios and butter.

4) Mix until the butter melts and all the sauce are combined.

5) At this point add the pasta al dente and cook with all the sauce for about 1.5 minutes.

6) And serve.
